Chardonnay (82%) and Pinot Noir (18%) were hand harvested at early maturity to make a neutral base wine. Whole bunch pressing is a gentle process, which produces juice light in phenolics and delicate in flavour. Moderate fermentation temperatures produce a delicate, neutral base wine. Post the second fermentation in the bottle, this 2000 Méthode Traditionelle had nearly nine years maturation on yeast lees. This maturation process produces rich, creamy yeast autolysis characters, which typify the Méthode Traditionelle process. The process of riddling, disgorging, liquering and labeling are all performed carefully by hand, to produce this stylish, elegant wine. Hand picked, hand bottled, hand riddled, hand disgorged and hand liquered, a truly hand crafted wine.
COLOUR: Deep gold. Fine, persistent bead.
AROMA: Toasty, biscuity yeast autolysis character.
PALATE: This creamy bubbly shows excellent maturity. Toast and bread characteristics are held together with firm acid and hints of vegemite and butter.
